Loaded Hummus Toast
Loaded Hummus Toast is a quick and nutrient-packed snack combining creamy hummus, fresh cherry tomatoes, black olives, and peppery arugula on perfectly toasted seed and oat bread. Each bite delivers essential nutrients and supports heart health with the added benefits of tahini and sesame seeds.
Ingredients (Serves 1)
- ¼ cup hummus (make your own!)
- ¼ cup cherry tomatoes, sliced
- ¼ cup black olives
- ½ cup arugula
- Salt and pepper to taste
- 1 tablespoon black and white sesame seeds
- 1 tablespoon tahini
- 2 pieces of nutrient-dense bread (I eat the seed and oat bread by Kupfert and Kim)
Directions
- Toast your bread to your preferred level of crispiness.
- Spread 2 tablespoons of hummus on each slice of toast.
- Top each piece with sliced cherry tomatoes, black olives, and a handful of fresh arugula.
- Drizzle tahini over the top and season with black and white sesame seeds, along with salt and pepper to taste.
