Mood Boosting Overnight Oats

This quick burger is hearty and satisfying. Made with black beans and spices, it's a great alternative to traditional burgers.

Ingredients (Serves 2)

  • 1 apple
  • 1 cup organic rolled oats
  • 1 tablespoon cocoa powder
  • Pinch of salt
  • ½ tablespoon cinnamon
  • 2 tablespoons chia seeds
  • 1 tablespoon hemp hearts
  • ¼ cup pumpkin seeds
  • 1 cup soy milk
  • ½ cup chopped strawberries
  • ½ cup blueberries  
  • 1 tablespoon maple syrup

Directions

  1. In a container, combine the dry ingredients: rolled oats, cocoa powder, salt, cinnamon, chia seeds, hemp hearts, pumpkin seeds and mix well. 
  2. Next, add the wet ingredients: soy milk, strawberries, and blueberries to the container and stir to combine.
  3. Refrigerate the mixture for at least 4 hours or overnight to allow the flavours to mix and the oats to soften.
  4. When ready to serve, top with maple syrup and enjoy!
