Palakh's Palak Tofu
Packed with protein and nutrient-dense greens, Palakh’s Palak Tofu is a creamy, flavorful dish that fuels your body and boosts energy. A delicious way to enjoy the benefits of spinach, arugula, and tofu in every bite!
Ingredients (Serves 2-3)
- 1 tablespoon avocado oil
- 2 inch ginger, minced
- The following spices: salt and pepper to taste, 2 teaspoons cumin powder, 1 teaspoon garam masala, 1 teaspoon smoked paprika, 2 tablespoons nutritional yeast
- ½ cup cashews
- 1 cup chopped zucchini
- 1 cup water
- ½ cup oat milk
- 1 cup arugula
- 3 cups spinach, washed and chopped
- 1 pack of firm tofu, pressed for 10 mins to remove excess moisture and then cubed
- ¼ cup coriander (to garnish with)
- 1 cup brown rice (to serve with)
Directions
- Heat 1 tablespoon of avocado oil in a pan over medium heat.
- Add the grated ginger and the spice blend (cumin powder, garam masala, paprika, salt, and pepper). Stir and cook for 1-2 minutes until fragrant.
- Add ½ cup of cashews and ½ cup of water to the pan. Then, add the chopped spinach, arugula, and oat milk.
- Let the mixture simmer for 5 minutes, then blend until smooth to create a creamy sauce.
- In a separate pan, heat a small amount of oil over medium heat. Cook the cubed tofu for 2-5 minutes, seasoning with salt and pepper to taste, until lightly browned.
- Combine the blended spinach mixture with the cooked tofu in the pan. Stir well to coat the tofu evenly with the sauce.
- Serve hot with brown rice and garnish with chopped coriander (optional). Enjoy!
