Palakh's Palak Tofu

Packed with protein and nutrient-dense greens, Palakh’s Palak Tofu is a creamy, flavorful dish that fuels your body and boosts energy. A delicious way to enjoy the benefits of spinach, arugula, and tofu in every bite!

Ingredients (Serves 2-3)

  • 1 tablespoon avocado oil
  • 2 inch ginger, minced
  • The following spices: salt and pepper to taste, 2 teaspoons cumin powder, 1 teaspoon garam masala, 1 teaspoon smoked paprika, 2 tablespoons nutritional yeast
  • ½ cup cashews
  • 1 cup chopped zucchini
  • 1 cup water
  • ½ cup oat milk
  • 1 cup arugula
  • 3 cups spinach, washed and chopped
  • 1 pack of firm tofu, pressed for 10 mins to remove excess moisture and then cubed
  • ¼ cup coriander (to garnish with)
  • 1 cup brown rice (to serve with)

Directions

  1. Heat 1 tablespoon of avocado oil in a pan over medium heat.
  2. Add the grated ginger and the spice blend (cumin powder, garam masala, paprika, salt, and pepper). Stir and cook for 1-2 minutes until fragrant.
  3. Add ½ cup of cashews and ½ cup of water to the pan. Then, add the chopped spinach, arugula, and oat milk.
  4. Let the mixture simmer for 5 minutes, then blend until smooth to create a creamy sauce.
  5. In a separate pan, heat a small amount of oil over medium heat. Cook the cubed tofu for 2-5 minutes, seasoning with salt and pepper to taste, until lightly browned.
  6. Combine the blended spinach mixture with the cooked tofu in the pan. Stir well to coat the tofu evenly with the sauce.
  7. Serve hot with brown rice and garnish with chopped coriander (optional). Enjoy!
