Tofu Stir Fry

Enjoy a vibrant, protein-packed stir-fry with tofu and fresh vegetables. This quick, flavorful meal is perfect for fueling an active lifestyle.

Ingredients (Serves 2)

  • 1 block extra firm tofu, pressed and cubed
  • ¼ cup carrots, chopped 
  • ¼ cup bell peppers, chopped 
  • 1 cup asparagus, chopped 
  • ¼ cup broccoli, chopped 
  • ¼ cup low sodium soy sauce
  • ¼ cup peanut butter
  • ¼ cup vinegar 
  • ½ cup water
  • ½ cup mushrooms 
  • 1 teaspoon asafoetida powder 
  • 1 tablespoon ginger, grated 
  • 1 teaspoon smoked, flaky salt
  • ½ cup brown rice, cooked

Directions

  1. In a medium-hot saucepan, start by adding ½ cup of water and the grated ginger. Stir to combine and bring out the ginger's aroma.
  2. Next, pour in the soy sauce, vinegar, and peanut butter. Mix until the sauce is smooth and well combined.
  3. Add the cubed tofu and sprinkle in the asafoetida powder, stirring everything together.
  4. Toss in the chopped broccoli, asparagus, carrots, bell peppers, and mushrooms, followed by the smoked, flaky salt. Stir to ensure all the veggies are evenly coated in the sauce.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Serve the flavorful mixture over a bed of cooked brown rice and enjoy!
