Dad's Peanut Stew

Dad's Peanut Stew brings together wholesome vegetables and rich peanut flavor in a comforting, hearty dish. Perfect for a quick, nutritious meal, it's packed with protein and fiber to keep you satisfied.

Ingredients (Serves 4)

  • 1 cup chickpeas, soaked and cooked
  • ½ cup fennel, chopped 
  • ½ cup bell peppers, chopped 
  • ¼ cup asparagus, chopped 
  • ½ cup zucchini, chopped 
  • 1 small jalapenos, chopped
  • 2 large tomatoes, pureed
  • 3 tablespoon coconut amino (soy-free sauce)  
  • ¼ cup peanut butter 
  • 1 tablespoon ginger, grated
  • 3 cups homemade vegetable seaweed broth
  • Cilantro to garnish 
  • Salt and pepper to taste
  • For serving (optional): brown rice, millet, or quinoa

Directions

  1. Start by combining the soaked chickpeas, chopped fennel, bell peppers, asparagus, zucchini, and jalapenos in your Instant Pot. Add in the crushed tomatoes, soy sauce, peanut butter, and vegetable broth. Give everything a good stir to ensure it's well mixed.
  2. Secure the lid on your Instant Pot and set it to cook on high pressure for 15-20 minutes.
  3. Once the cooking time is up, carefully release the pressure. Serve the stew over a bed of cooked brown rice, millet, or quinoa if you like.
  4. Finish by garnishing with fresh cilantro and seasoning with salt and pepper to taste. Dig in and enjoy the comforting flavours!
