Smashed Falafel Wraps

A quick and healthy way to enjoy a protein-packed meal in under 30 minutes. Full of fiber, healthy fats, and essential nutrients, they make a delicious and satisfying meal for two.

Ingredients (Serves 2)

  • 1 tablespoon olive oil
  • 2 veggies or blue corn tortillas 
  • 1 cup dried chickpeas, soaked 
  • 1 cup frozen peas, defrosted
  • ¼ cup sunflower seeds 
  • 1 tablespoon tahini 
  • 1 tablespoon ground flaxseed 
  • 1 tablespoon kalonji (nigella seeds)
  • 1 mini cucumber, sliced 
  • 2 tablespoons soy yogurt
  • ½ cup arugula 
  • ½ lemon 
  • 1 tomato, sliced
  • ¼ cup corn 
  • The following spices: 1 tablespoon salt, 1 teaspoon red chili powder, 1 tablespoon nutritional yeast, 1 teaspoon fennel seeds

Directions

  1. Grind the soaked chickpeas, tahini, peas, sunflower seeds, spices (salt, chili powder, nutritional yeast, fennel seeds), kalonji (nigella seeds), and ground flaxseed in a blender or food processor until it has a rough paste-like consistency.
  • I ran out of hemp seeds but I usually add them in along with the sunflower seeds…
  1. In a medium-hot saucepan, add ½ tablespoon of oil and wait until it is heated.
  2. While the oil is heating, spread 1 scoop of the chickpea mixture evenly onto a blue corn tortilla.
  3. Once the oil is hot, place the tortilla with the chickpea mix side down in the pan.
  4. Cook for 2-3 minutes until the bottom of the tortilla is crispy and golden brown.
  5. Flip the tortilla and cook for another 1-2 minutes on the other side until the tortilla is fully heated and slightly crispy.
  6. Spread a layer of soy yogurt on one side of the tortilla. Add sliced tomatoes, cucumbers, and arugula on top. Squeeze fresh lemon juice over the vegetables to taste.
  7. Fold the tortilla in half and serve hot. Enjoy!
