Tofu Scramble

If you love a quick, protein-packed breakfast—this tofu scramble is your go-to for busy mornings!

Ingredients (Serves 2)

  • 1 tablespoon avocado oil
  • ¼ cup celery, chopped 
  • 1 teaspoon turmeric 
  • 1 cup coloured bell peppers (yellow, green, orange, red), chopped 
  • 1 pack firm tofu, crumbled 
  • ½ cup soy milk 
  • 1 teaspoon Italian seasoning 
  • 1 cup spinach, washed and chopped 
  • 1 tablespoon nutritional yeast 
  • ¼ cup parsley, chopped
  • ½ tablespoon ground flaxseed 
  • Salt and pepper to taste

Directions

  1. Heat the avocado oil in a saucepan over medium heat. Add the chopped celery, turmeric, and bell peppers. Sauté for a few minutes until the vegetables start to soften.
  2. Using your fingers, crumble the firm tofu into the pan and mix well with the sautéed vegetables.
  3. Pour in the soy milk and stir to combine, allowing the mixture to simmer gently.
  4. Add the chopped spinach to the pan, followed by the Italian seasoning, ground flaxseed, and nutritional yeast. Stir everything together until well mixed.
  5. Season with salt and pepper to taste, adjusting as needed.
  6. Remove the pan from heat and let the mixture rest for a few minutes before serving.
  7. Top with chopped parsley and enjoy!
