Tofu Scramble
If you love a quick, protein-packed breakfast—this tofu scramble is your go-to for busy mornings!
Ingredients (Serves 2)
- 1 tablespoon avocado oil
- ¼ cup celery, chopped
- 1 teaspoon turmeric
- 1 cup coloured bell peppers (yellow, green, orange, red), chopped
- 1 pack firm tofu, crumbled
- ½ cup soy milk
- 1 teaspoon Italian seasoning
- 1 cup spinach, washed and chopped
- 1 tablespoon nutritional yeast
- ¼ cup parsley, chopped
- ½ tablespoon ground flaxseed
- Salt and pepper to taste
Directions
- Heat the avocado oil in a saucepan over medium heat. Add the chopped celery, turmeric, and bell peppers. Sauté for a few minutes until the vegetables start to soften.
- Using your fingers, crumble the firm tofu into the pan and mix well with the sautéed vegetables.
- Pour in the soy milk and stir to combine, allowing the mixture to simmer gently.
- Add the chopped spinach to the pan, followed by the Italian seasoning, ground flaxseed, and nutritional yeast. Stir everything together until well mixed.
- Season with salt and pepper to taste, adjusting as needed.
- Remove the pan from heat and let the mixture rest for a few minutes before serving.
- Top with chopped parsley and enjoy!
