Blueberry Chia Pudding

A delicious and nutrient-packed treat, perfect for a quick snack. Packed with antioxidants, protein, and fiber to keep you feeling great!

Ingredients (Serves 2)

  • ½ cup chia seeds 
  • ¼ cup almonds, sliced
  • ¼ cup pecans, roughly chopped 
  • 1 tablespoon vanilla powder
  • ¼ cup blueberries 
  • ¼ cup strawberries, chopped 
  • ½ cup soy milk
  • Nutmeg, grated

Directions

  1. In a container, combine ½ cup chia seeds, ¼ cup sliced almonds, ¼ cup roughly chopped pecans, 1 tablespoon vanilla powder, ¼ cup blueberries, ¼ cup chopped strawberries, and ½ cup soy milk.
  2. Grate some fresh nutmeg over the mixture.
  3. Stir everything well to combine, then cover the container and refrigerate for at least 2-4 hours, or overnight, until the mixture thickens.
  4. Once thickened, give it a good stir and enjoy!
