Blueberry Chia Pudding
A delicious and nutrient-packed treat, perfect for a quick snack. Packed with antioxidants, protein, and fiber to keep you feeling great!
Ingredients (Serves 2)
- ½ cup chia seeds
- ¼ cup almonds, sliced
- ¼ cup pecans, roughly chopped
- 1 tablespoon vanilla powder
- ¼ cup blueberries
- ¼ cup strawberries, chopped
- ½ cup soy milk
- Nutmeg, grated
Directions
- In a container, combine ½ cup chia seeds, ¼ cup sliced almonds, ¼ cup roughly chopped pecans, 1 tablespoon vanilla powder, ¼ cup blueberries, ¼ cup chopped strawberries, and ½ cup soy milk.
- Grate some fresh nutmeg over the mixture.
- Stir everything well to combine, then cover the container and refrigerate for at least 2-4 hours, or overnight, until the mixture thickens.
- Once thickened, give it a good stir and enjoy!
