Easy Bake Polenta Fries

Let’s make Easy Bake Polenta Fries: A crispy, gluten-free snack that’s perfect for your gut and digestion! With just a few simple ingredients, these fries are a healthier, tasty alternative to traditional fries.

Ingredients (Serves 2)

  • ½ package minimally processed polenta (or 1 batch Easy Vegan Polenta)
  • 1 tablespoon avocado oil (to use less oil, spray to coat the fries with oil // if oil-free, omit and cook in an air fryer for best results)
  • ½ tablespoon dried Italian herbs (basil + oregano)
  • 1 tablespoon nutritional yeast

Directions

  1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. If using pre-cooked polenta, skip to step 3. If making your own, cook the polenta and spread it in a parchment-lined 8×8-inch dish. It should be 1/4 – 1/2 inch thick. Refrigerate for 1 hour or freeze for 30 minutes until firm.
  3. Remove the pre-cooked or chilled polenta and cut it into fry shapes. If it’s crumbling, refrigerate for 15 more minutes before cutting.
  4. Toss the polenta fries with avocado oil, dried herbs, salt, nutritional yeast, and turmeric.
  5. Oven Method: Arrange the fries evenly on the baking sheet and bake for 30 minutes, flipping halfway through for even browning.
  6. Air Fryer Method: If you prefer an oil-free option or are using an air fryer, arrange the fries in the air fryer basket in a single layer. Cook at 400°F (204°C) for 15-20 minutes, shaking the basket halfway through for even cooking.
  7. Let the fries cool slightly before serving. Enjoy with marinara sauce or vegan pesto!
