Frozen Brownie Bites

Ingredients (Serves 3 bites)
- ½ cup cooked quinoa
- ¼ cup unsweetened cocoa powder
- 1 tablespoon maple syrup
- ¼ cup almond butter
- 2 medium ripe bananas, mashed
- ¼ cup unsweetened oat or almond milk
- 1 teaspoon baking powder
- ¼ cup chopped pecans
- ¼ cup chopped walnuts
- 1 nutmeg
Directions
- In a food processor or blender, combine the mashed bananas, cooked quinoa, almond butter, chopped pecans, chopped walnuts, maple syrup, cocoa powder, and baking powder. Blend until the mixture is smooth and well combined.
- Pour the batter into a cupcake mold and freeze for 1 - 4 hours until set.
- Once set, remove from the freezer, grate fresh nutmeg on top, and enjoy!
